Winemaking
We usually let Pinot Gris hang out in the vineyard longer than if we were making a typical style of Pinot Gris, aiming for richness and depth.

Every cluster is hand-sorted and destemmed before heading straight into a cold soak—where the real alchemy happens. As the juice and skins cozy up, phenolics gradually infuse, intensifying aromatics, amplifying texture, and giving the wine its signature whisper of peach skin and pink-orange hue.

We hovered over it, as per usual, tasting every 6 to 8 hours, waiting for that perfect moment when skin influence and texture reached their peak. This time? 36 hours (It’s starting to feel like a lucky number). Just before pressing, we gave the fermenter one gentle punch-down—like a little snuggle before sending it to press.

The result? A Pinot gris that is bursting with aromatics and fun and unique flavors.

Winemaking
This Grenache is true to character from Walla Walla. It reminds us very much of Walla Walla with its rich, dark fruits and floral notes with a slight underlying grace. This Grenache was all destemmed and spent 18 days on skins, again, when the fruit smelled like beautiful fruit and floral tones, we pressed. In order to keep it true to style, moved it to neutral French oak for ten months of aging.

Our block sits at about 1300ft elevation and has plenty of cool wind hitting it in the evenings and early mornings during growing season. 

Block 50 specifically is an intriguing and very unique block of Les Collines and all of Walla Walla. It is the only block that doesn’t practice hedging at all. So the canopy provides a signifiant amount of protection from the hotter/sunnier days in Walla Walla. 

We pick this with enough acidity and structure while still trying to achieve depth of fruit. in 2023, we did ALL whole cluster and ALL amphoae.

The 2024 Pinot Noir drives forward on energy and lift, from two iconic clones — Pommard and 115.

One-third whole cluster offers a bit of freshness and fruit, and one-third new oak frames and pushes the wine without slowing it down. This wine will always be  a Willamette Valley designate.

The 2024 Pinot Noir moves with intention: fresh, bright, and easy to consume, showing exactly what our region can generate when focus meets momentum.

Winemaking
Paden took the lead on this Chardonnay, DUH. He is the most obsessed with Chardonnay of anyone we know.

When I told him I want Approachment to make a Chardonnay that can be consumed now, he took me up on the challenge.

Paden didn’t spend 7 years learning to make Chardonnay that way.

We carefully selected cooperage that we knew would fit that profile we were looking for, and didn’t require a long aging process. We were looking for Chablis meets Oregon. And I think we accomplished it. 

To preserve the integrity of this Chardonnay, we chose to not filter or fine the wine. As a result, you may notice harmless crystals, or mild sediment over time—a natural occurrence that does not affect the quality or taste of the wine.

Our Gamay went directly from vineyard to a stainless steel tank— 100% whole-cluster. The moment those clusters filled that tank, we sealed that buddy tight. Unlike the many styles of wine we've crafted over the years, the goal here, again, was to do absolutely nothing, which is HARD. Let’s be real—no winemaker actually wants to do nothing. So, we kept watch, tucked it in with a little CO₂ and nudged the temperature here and there—just enough to guide it in the right direction. Think of it as daily doses of gentle encouragement... and maybe the occasional pep talk, an affirmation if you will.

For 2024, we shortened the maceration time to 12 days in the oxygen-free environment, (the perfect amount of time for intracellular fermentation) before pressing and sending it to neutral french oak barrels. That carbonic process? It’s what inspired the astronaut label.

No oxygen. Space. See what we did there? 🚀
